As shown in the top illustration, the slaughtering stages are the following
Pigs come up to the stunning area from the pens. There are two different stunning methods: by application of electrical current and by immersing pigs inside a pit filled with CO2. The choice for one system or another normally depends on production exigencies among other reasons.
After this, pigs are knife-stuck and hoisted up to the bleeding area. Previously to the scalding, carcasses are cleaned off and after the scalding they are dehaired. An optimal dehairing depends highly on a correct scalding.
Once the dehairing process is over, carcasses are hoisted up to the dressing area track. At this stage they are dried, pass through the flame off furnace, polished, dressed and split. When the dressing tasks are over, carcasses are led to the cooling room and then to the storage room or to the cutting room.
